Shinobu Distillery – Nigata Beer

Nigata Prefecture is widely known as the beautiful land of the “three platinum stars” of snow, rice and sake. Shinobu Distillery, will be built on the same site as Nigata Beer, owned by Mr. Ken Usami. He is an experienced brewer, loves whiskey, and founded Nigata Beer 20 years ago, the craft beer brewery. He is an innovative brewer who was the first time introduced secondary fermentation and aging in the bottle in Japan. During his working days as a brewer, Mr. Usami dreamed of using the local clear water to provide the high quality whiskey for spirits enthusiasts . He came up with the idea of ​​building a distillery in my hometown of Nigata that would make that possible. Finally, Mr. Usami could obtain the whiskey distilling license first time in Nigata City in 2016. At Shinobu Distillery, was imported casks from various distilleries until the construction of the distillery was completed, has made and sold blended whiskey and pure malt whiskey used unblended whiskeys which have been cask-finished Mizunara casks. The Shinobi 10 Years won the Gold Award at the International Spirits Challenge (ISC) 2020. It will be focus on the movements in the futuer including the construction of a distillery.
